Chef Paco Morales, who has already earned a Michelin star for the restaurant in the Hotel Ferrero in Valencia, is the advisor to Al Rag, the restaurant at Hotel de Las Letras, on Gran Vía Madrileña . A perfect setting in which to develop a concept that the chef passionately coined as ” Casual Fine Dining.” Can you convert an average restaurant lunch or dinner into an experience for the senses? We think so. Paco thinks and rethinks everything he does. He is a genius, a mad chef, among other things, and has been pioneering using 3D printers to make food. After months trying to give the ideal proposal for his restaurant, Paco came to the conclusion, by the chef Rafael lace, that “in the end the customer wants to eat something simple, which is good, but they also want have a fine-dining experience that is surprising but accessible.” The menu is the first surprise. Not divided into traditional categories but divided into categories based on flavors and technical difficulty like “to eat with your hands and finger licking” and “so far so close.” We recommend that you combine a couple of the more simple plates like the bun with blood sausage quail egg and Iberian bacon which fall under 5 euros. Or try the lamb ravioli, with black truffle and Périgord sauce, simply delectable. We will definitely not fail to mention the cheeses and wines, from small, local, and more international providers.
Average price per person: 40 Euros
